Hangover Huevos Rancheros

For the Salsa
1 can of unsalted diced Tomatoes
ยผ red onion, chopped
1 clove of garlic
1 Jalapeno seeded
A handful of fresh cilantro

For the Tortillas
Masa Flour (Finely ground corn flour)

3-6 eggs
2 Chorizo Sausages, removed from caseing.
Vegetable oil
1 can of refried beans

Start by making the salsa: in a food processor blend all the ingredients until fairly smooth. Then pour into a pot and reduce over a low heat while you make the rest of the meal.
For the tortillas, follow the directions on the packaging mixing the flour with water and salt until a dry dough is formed. To flatten the tortillas you can use a press, two plates or anything else thatโ€™s flat and heavy. Place parchment paper on your flattening surface and create a ball of dough slightly larger than a golf ball. Flatten to about 2 millimeters in thickness and then place it to the side and work on the next one. Once all the tortillas are make you can get started on the sausage.
In a hot pan add the chorizo sausage in small pieces and fry up until cooked through. Transfer to a plate covered with a paper towel.
To finish to tortillas, use the same pan that you used for the sausage and add a couple glugs of oil. Over a medium heat let the oil come up to temperature and then lay in a couple tortillas at a time. Fry on each side until golden, 2-3 minutes.
Lastly, fry up a few eggs to your liking.
Finally, combine the whole dish by laying down your tortilla and spreading refried beans over top. Then add some sausage, your eggs and pour over the reduced salsa you made. Top with some sliced avocado and a sprinkle of fresh cilantro.
